I can't believe that it's June and the last I wrote here was in February!! Bad Girl!!

We finally had a cooking session.  My daughter Melodie, her friend Robin and I.  We did around 10 recipes doubled for each family.Had a great time and did this again.  This time we added Ms. Renee, Mel's neighbor and Aunt Linda (Mel's aunt and my long lost sister, which I will write about here in a little while!!).  We did 28 main event dishes for each of our families and made 28 individual portions for 3 folks having a hard time with cash right now and not eating right.  We did the chicken burritos (fan fave lol), meatball casserole, Chicken and Sausage stuffed Manicottis, Shepard's Pie, Pizza Pasta Casserole, Mexi Beef Casserole, Meatloaf, Honey Ginger Chicken, Low Fat Swiss Steak and gravy, Corn Flake Potato and Ham casserole, Fish in foil, Ham and cheese Ziti, Stuffed Chicken breasts, Caramelized baked chicken and Rosemary Chicken.

We were WAY more organized the second time.  We had several meetings beforehand so we were better prepared. We got the chicken we needed from Capital Poultry in Detroit, saved a ton of money because we bought in bulk.  I had never had fresh chicken before.  These chickens were alive just a few days before we picked up.  We needed chicken meat for a few of the recipes so we had to boil up a bunch of legs/thighs and breasts for this.  The broth was so amazing.  I will NEVER buy store chicken again if I can help it.  The taste is way different too.  And the breasts don't get rubbery and tasteless when cooked. We bought a little extra for our freezer thank goodness!!

So far, everyone likes the food we have cooked. When we distributed food to the 3 folks they were so very happy.  I have asked that everyone be totally honest in how they like or dislike a recipe.  We do need to know this for future cookings.

We are meeting this Friday, June 25 to go over costs and issues we had so that next time it will go even more smooth.

I am sure there is more but I need to get paperwork done for the next meeting.

TaTa for now!!
